Regarding the properties of the product, these are basically the same since the caffeine content does not vary between one product and the other. However, natural coffee will be "healthier", since it does not contain added sugar.

However, in the rest of Europe, the blend or mixture is understood as a mixture of origins. What is the perfect blend? Once again, it’s a matter of taste. As an example: a Colombian, Kenyan, Guatemalan, or Costa Rican provides great aroma, a Haitian or Brazilian with a hint of bitterness, an Ivory Coast or Ugandan with body and strength, and finally an Ethiopian with a smooth body.

 

Are there differences between coffee, decaffeinated, and soluble coffee?

Decaffeinated coffee is stripped of its caffeine content.

The result is a coffee that looks almost the same as the original, differing only in the thin silver film that is lost through breakage when the bean swells when moistened. Once roasted, its appearance is darker and its bitterness is less, because the caffeine confers 10% of the bitterness. 

Certain aroma and flavor characteristics are also attenuated depending on the decaffeinating process used. Finally, conservation is less delicate, as some fats that cause bad odor and flavor when oxidized disappear during the process.

As for soluble coffee, this is the coffee extract (roasted or decaffeinated) obtained thanks to the dehydration or drying of the coffee. The process consists of the elaboration of a large quantity of the prepared beverage in industrial steel coffee pots hermetically sealed to conserve the aromas. The extract is subsequently filtered, and the water is eliminated by dehydration. 

In this technique, a punctual thermal treatment is applied that eliminates the water and allows the extraction of dry soluble coffee. It is the most widely used and commercialized.
